Taqueria Overview
Taquerias are informal Mexican eateries that specialise in making and serving tacos. Taquerias line the streets of Mexico’s towns and cities. Mexicans of virtually all social and economic backgrounds go to taquerias to eat tacos and other snacks called antojitos, meaning ‘a little of what you fancy’. Antojitos vary from region to region, are based on corn dough – known as masa – and come with a dizzying array of fillings or toppings.
The most common antojito is a taco, which is a corn tortilla folded over a filling. The tortillas at Taqueria are made in-house everyday by Lupita, their tortilla-making machine. In Mexico, tacos are normally served on small corn tortillas and ordered in rounds. Their tacos are similar. They are soft, small and come in pairs. (Updated 30/11/2008)
