Taiwan Village Overview
Their Head Chef, Mr Huang, came from Taiwan where he was trained in a wide variety of Chinese cuisines, but he specialises in the regional cuisines of Taiwan, Hunan and Szechuan. He has worked in a variety of restaurants in the centre of London since the mid-1980’s, and understands the level of quality and preferences that customers expect from a fine Chinese restaurant.
Taiwan has shared the influence of mainland China and this is reflected in both the culture and the cuisine. Whilst Taiwan retains its own local culinary traditions, it has recently experienced an increase of Hunan and Szechuan regional culinary influences.
Hunan and Szechuan are situated in the south-west of China, and are renowned for their peppery, tangy, ganshow and seafood spicy dishes, together grouped under the common title of ‘Western Cuisine’. In comparison, Taiwanese cuisine tends to be milder. They all lay claim to a small but memorable repertoire of specialities and Chinese gourmets. (Updated 30/11/2008)
