Tuesday the 27th May 2008 marks the official opening of the latest venture from restaurateur Claudio Pulze, in collaboration with acclaimed chef Pierre Koffman.

Brasserie St Jacques celebrates the opening of Pulze’s 51st restaurant and will offer a traditional brasserie style service opening from breakfast ‘til late supper, seven days a week.

The breakfast menu will be available from 8.00 am until 11.30 and a selection of dishes throughout the day will be served between lunch and dinner.

Pierre Koffman has taken full responsibility of the kitchens, from staffing to developing the menu. His chosen head chef Ashley Hancill has been an acquaintance of Koffman for the last 5 years and under his direct supervision will produce the menu at Brasserie St Jacques. Hancill, formerly of Inn on the Park and The Pig’s Ear in Chelsea, will manage the day-to-day kitchen operation.

Some examples of the traditional French dishes offered will be Tartare de boeuf au couteau, Hand cut steak tartar with fries and mixed leaves, Cassoulet Toulousain, Butter bean casserole, lamb, pork and Toulouse sausage and to follow Oeufs a la neige, Floating islands.

During the restaurant’s renovation, a builder’s slip-up revealed an insight into the room’s original features. The previously unseen skylight and period cornicing were finally exposed and its original colouration added an inspired alteration to the existing design plans. As a result, a private dining room was added, the unique cornicing repaired and the colour scheme changed to match the original deep gold.
